List of technical tours EAAP 2024, the 5th of September

For logistic and organizational reasons, it is strictly recommended not to cancel or change the tours chosen.

1. Agroforestry system and Maremmana cattle for sustainable beef production

Morning activity: Visit of a silvopastoral system with long-horn Maremmana cattle beef farm.

Lunch: Health, biodiversity, and flavour taste the same! Small workshop carried out in a convivial way at mealtime tends to provide a different approach to food, highlighting the deep differences associated with meats of different origins by focusing on all our senses, which are too often underestimated in food evaluation.

Afternoon activity: Pig free range livestock system with Cinta Senese breed organic husbandry, from pasture to on-farm slaughtering system.

2. Discovering the Chianina cattle: the giant cattle breed

Morning activity: Visit of the genetic centre of beef cattle breeds from the Central Italy.

Lunch: Thematic meal based on regional products and Chianina beef.

Afternoon activity: visit to two Chianina cattle beef farms.

3. Chianina beef cattle, wine, and tourism: a multifunctional farm in the typical Tuscany landscape

Morning activity: Visit of a multifunctional, organic farm with Chianina cattle, wine production and agri-tourism activity.

Lunch: Thematic meal based on regional products and Chianina beef.

Afternoon activity: Discovery of San Gimignano town: the town of one hundred towers.

4. Pecorino Toscano PDO cheese: tradition and innovation in dairy sheep farming and milk processing

Morning activity: Visit of a dairy sheep farm with Sarda breed and smart collars for animal monitoring

Lunch: Thematic meal based on regional products and Pecorino Toscano DOP cheese.

Afternoon activity: Visit of a Pecorino Toscano cheese factory.

5. Selection program of two Italian dairy sheep breed: Massese and Comisana

Morning activity: Visit of the genetic centre with two Italian dairy sheep breeds: Massese and Comisana

Lunch: Thematic meal based on regional products and Pecorino Toscano DOP cheese.

Afternoon activity: Visit of a dairy sheep farm with Lacaune breed and an on-farm cheese production.

6. A journey in Maremma: the regional natural park “Parco dell’Uccellina”

Morning activity: visit of the farm with Maremmana beef cattle breed, and opportunity to see the local herdsman at work riding the Maremmano horse.

Lunch: Thematic meal based on regional products.

Afternoon activity: discovery the Maremma regional parc

7. Mediterranean buffalo and the taste of mozzarella cheese

Morning activity: visit to a farm with Mediterranean dairy buffalo

Lunch: Thematic meal based on regional products and mozzarella and other cheese based on buffalo milk.

Afternoon activity: discovery the Maremma regional parc

8. The food triangle: discovering Parma cured ham PDO and Mortadella GPI

Morning activity: Visit to a Parma cured ham factory in Langhirano, a small village on the hills close to Parma.

Lunch/aperitivo: testing Parma cured ham.

Afternoon: visit to a Mortadella factory close to Bologna

The visit will start at 9:30 a.m and the departure from Florence will be at 6:00 a.m. Expected arrival to Florence in the afternoon at 7pm

9. Parmigiano Reggiano: the king of the cheeses

Morning activity: Visit of a Parmigiano Reggiano Cheese factory in the Parma province: cheese making activity, tour of the cheese plant and final degustation. The visit will start at 8:30 a.m and the departure from Florence will be at 6:15 a.m.

Visit of Parma old town

Lunch: Thematic meal based on regional products in Parma.

BOOKING CONDITIONS

  • All tours take place on September 5th. Please note that only one registration is permitted.
  • The chosen tour can be added to your registration during the online signup process.
  • Space is limited, and spots will be filled on a first-come, first-served basis. Register early to secure your place.
  • Only one accompanying guest per participant is allowed.
  • The tours offer convenient round-trip transportation, starting and ending at Firenze Fiera, the congress venue.
  • Please arrive 15 minutes prior to departure.
  • Rates include VAT.

CANCELLATION POLICY

  • Bookings are non-refundable, any cancellation of reservations is subject to a 100% cancellation fee.
  • In the event we don’t reach the minimum number of participants required to run the tour, we may offer you the option to transfer your booking to a different one or receive a full refund.
